- 1280 g bread flour(280g)
- 230 g honey(30g)
- 35 g salt(5g)
- 430 g unsalted butter (soft)(30g)
- 54 g dry instant yeast(4g)
- 615 g eggs(15g)
- 7145 g milk(145g)
- 8125 g roll-in butter(125g)
- 95 g turmeric (for color)(5g)
Instructions
- 1In a large bowl, combine bread flour, honey, salt, 30g soft unsalted butter, dry instant yeast, eggs, milk, and turmeric.
- 2Mix until a dough forms, then knead until smooth and elastic.
- 3Cover the dough and chill in the refrigerator overnight.
- 4The next day, roll out the dough and laminate with 125g roll-in butter using 1 double fold and 1 single fold.
- 5Roll the dough into a rectangle approximately 8.6 x 6.7 inches (22 x 17 cm).
- 6Divide the dough into 8 equal pieces and roll each piece.
- 7Place the rolled pieces into a loaf pan or arrange on a baking tray.
- 8Preheat the oven to 375°F (190°C).
- 9Bake for 22-25 minutes until golden brown.
