Ingredients
- 150 g lemon zest(50g)
- 250 g peeled almonds(50g)
- 31 garlic clove(5g)
- 450 g grated cheese (Grana Padano)(50g)
- 55 g basil(5g)
- 620 ml lemon juice(20g)
- 780 ml olive oil(73g)
- 81 pinch salt(0.5g)
Instructions
- 1Wash and dry the lemons. Grate the zest, avoiding the bitter white part.
- 2In a food processor, combine the lemon zest, peeled almonds, garlic clove, grated cheese, and basil.
- 3Add the lemon juice and a pinch of salt.
- 4Blend the ingredients, slowly pouring in the olive oil until you obtain a creamy and homogeneous pesto.
- 5Taste and adjust salt if necessary.
- 6Use immediately or store in an airtight container in the refrigerator.
