Ingredients

  • 150 g lemon zest(50g)
  • 250 g peeled almonds(50g)
  • 31 garlic clove(5g)
  • 450 g grated cheese (Grana Padano)(50g)
  • 55 g basil(5g)
  • 620 ml lemon juice(20g)
  • 780 ml olive oil(73g)
  • 81 pinch salt(0.5g)

Instructions

  1. 1Wash and dry the lemons. Grate the zest, avoiding the bitter white part.
  2. 2In a food processor, combine the lemon zest, peeled almonds, garlic clove, grated cheese, and basil.
  3. 3Add the lemon juice and a pinch of salt.
  4. 4Blend the ingredients, slowly pouring in the olive oil until you obtain a creamy and homogeneous pesto.
  5. 5Taste and adjust salt if necessary.
  6. 6Use immediately or store in an airtight container in the refrigerator.
