Persian Zulbia (Sweet Fried Dough)
Ingredients
- 11 cup wheat starch(120g)
- 20.67 cup yogurt (full-fat, local)(140g)
- 30.5 tablespoon cake flour(5g)
- 40.1 teaspoon baking soda or baking powder(0.5g)
- 51 brewed saffron or yellow food coloring(1g)
- 6500 ml frying oil(460g)
- 71 cup sugar syrup (for soaking)(250g)
Instructions
- 1Mix wheat starch, yogurt, cake flour, and baking soda or baking powder in a bowl until smooth.
- 2Add brewed saffron or yellow food coloring as desired.
- 3Pass the batter through a sieve to remove lumps.
- 4Heat frying oil in a deep pan until hot.
- 5Pour the batter into a piping bag or squeeze bottle.
- 6Pipe the batter into hot oil in desired shapes and sizes.
- 7Fry until golden and crisp, turning with a fork to cook both sides.
- 8Remove from oil and immediately dip into warm sugar syrup.
- 9Quickly remove from syrup and place on a rack to drain excess.
- 10Serve fresh.
