Ingredients

  • 11 cup wheat starch(120g)
  • 20.67 cup yogurt (full-fat, local)(140g)
  • 30.5 tablespoon cake flour(5g)
  • 40.1 teaspoon baking soda or baking powder(0.5g)
  • 51 brewed saffron or yellow food coloring(1g)
  • 6500 ml frying oil(460g)
  • 71 cup sugar syrup (for soaking)(250g)

Instructions

  1. 1Mix wheat starch, yogurt, cake flour, and baking soda or baking powder in a bowl until smooth.
  2. 2Add brewed saffron or yellow food coloring as desired.
  3. 3Pass the batter through a sieve to remove lumps.
  4. 4Heat frying oil in a deep pan until hot.
  5. 5Pour the batter into a piping bag or squeeze bottle.
  6. 6Pipe the batter into hot oil in desired shapes and sizes.
  7. 7Fry until golden and crisp, turning with a fork to cook both sides.
  8. 8Remove from oil and immediately dip into warm sugar syrup.
  9. 9Quickly remove from syrup and place on a rack to drain excess.
  10. 10Serve fresh.
