Super Moist Mini Banana Loaf with Chocolate Chips and Almond Topping

- 20.33 cup oil(72g)
- 30.33 cup sugar(67g)
- 40.25 cup light brown sugar(55g)
- 50.33 cup yogurt(82g)
- 61 teaspoon vanilla essence(4g)
- 73 medium banana(350g)
- 82 cup all purpose flour(250g)
- 91 teaspoon baking powder(4g)
- 101 teaspoon baking soda(5g)
- 110.5 teaspoon cinnamon powder(1.3g)
- 120.25 teaspoon salt(1.5g)
- 130.25 cup milk powder(25g)
- 140.5 cup chocolate chips(90g)
- 150.25 cup sliced almonds(22g)
Instructions
- 1Preheat oven to 180°C (356°F). Grease or line mini loaf pans.
- 2In a large bowl, whisk together eggs, oil, sugar, light brown sugar, yogurt, and vanilla essence until well combined.
- 3Mash the bananas thoroughly and add to the wet mixture. Mix well.
- 4In a separate bowl, combine all purpose flour, baking powder, baking soda, cinnamon powder, salt, and milk powder.
- 5Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- 6Fold in the chocolate chips.
- 7Divide the batter evenly among the mini loaf pans.
- 8Top each loaf with additional chocolate chips and sliced almonds.
- 9Bake at 180°C for 28 minutes or until a toothpick inserted into the center comes out clean.
- 10Let the loaves cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
