Ingredients

  • 11 cup fresh parsley(30g)
  • 24 garlic cloves(12g)
  • 32 tablespoon dried oregano(6g)
  • 41 teaspoon crushed red pepper(2g)
  • 50.5 teaspoon ground black pepper(1g)
  • 60.5 teaspoon salt(3g)
  • 70.5 cup vinegar(120g)
  • 80.5 cup olive oil(110g)
  • 91 small onion(60g)
  • 100.5 red bell pepper(60g)

Instructions

  1. 1Finely chop the parsley, garlic, onion, and red bell pepper if using.
  2. 2In a bowl, mix all the chopped ingredients together. Add the oregano, crushed red pepper, ground black pepper, and salt.
  3. 3Pour in the vinegar and mix well to hydrate the ingredients.
  4. 4Slowly add the olive oil while stirring to emulsify the sauce.
  5. 5Adjust salt, vinegar, and spiciness to taste.
  6. 6Let the chimichurri rest for at least 30 minutes to allow the flavors to blend.
