Brown Sugar Plum Cornmeal Upside Down Cake
Ingredients
- 14 fresh plums(400g)
- 20.75 cup brown sugar(150g)
- 30.5 cup butter(115g)
- 42 eggs(100g)
- 50.75 cup milk(180g)
- 60.75 cup cornmeal(120g)
- 71 cup flour (all purpose or gluten free blend)(120g)
- 82 teaspoon baking powder(8g)
- 91 teaspoon cinnamon(3g)
- 100.5 teaspoon sea salt(3g)
Instructions
- 1Preheat oven to 350°F (175°C).
- 2Slice the plums and set aside.
- 3Melt the butter in a pan until it turns golden brown.
- 4Pour the melted brown butter into the bottom of a cake pan.
- 5Sprinkle brown sugar evenly over the butter.
- 6Arrange sliced plums on top of the brown sugar layer.
- 7In a large bowl, whisk together eggs and milk.
- 8Add cornmeal, flour, baking powder, cinnamon, and sea salt to the bowl and mix until just combined.
- 9Pour the cake batter over the plum layer in the pan.
- 10Bake for 35-40 minutes, or until a toothpick inserted in the center comes out clean.
- 11Let the cake cool for 10 minutes, then invert onto a serving plate.
- 12Serve warm or at room temperature.
