Ingredients

  • 11 whole fish(600g)
  • 21.5 kg coarse salt(1500g)
  • 31 lemon(120g)
  • 42 tablespoon olive oil(27g)
  • 510 g fresh herbs (such as parsley or thyme)(10g)

Instructions

  1. 1Preheat the oven to 200°C (390°F).
  2. 2Clean and gut the fish, leaving the skin and scales on.
  3. 3Stuff the cavity of the fish with lemon slices and fresh herbs.
  4. 4Spread a layer of coarse salt on a baking tray.
  5. 5Place the fish on top of the salt layer.
  6. 6Cover the fish completely with the remaining coarse salt, pressing gently to pack it around the fish.
  7. 7Bake in the preheated oven for 30-35 minutes, depending on the size of the fish.
  8. 8Remove from the oven and let rest for a few minutes.
  9. 9Crack the salt crust, remove the skin, and fillet the fish.
  10. 10Drizzle with olive oil and serve with extra lemon if desired.
