Zio Omar's Salt-Baked Fish
Ingredients
- 11 whole fish(600g)
- 21.5 kg coarse salt(1500g)
- 31 lemon(120g)
- 42 tablespoon olive oil(27g)
- 510 g fresh herbs (such as parsley or thyme)(10g)
Instructions
- 1Preheat the oven to 200°C (390°F).
- 2Clean and gut the fish, leaving the skin and scales on.
- 3Stuff the cavity of the fish with lemon slices and fresh herbs.
- 4Spread a layer of coarse salt on a baking tray.
- 5Place the fish on top of the salt layer.
- 6Cover the fish completely with the remaining coarse salt, pressing gently to pack it around the fish.
- 7Bake in the preheated oven for 30-35 minutes, depending on the size of the fish.
- 8Remove from the oven and let rest for a few minutes.
- 9Crack the salt crust, remove the skin, and fillet the fish.
- 10Drizzle with olive oil and serve with extra lemon if desired.
