Vegetable Patties with Green Curry
Ingredients
- 1600 g Boiled broccoli(600g)
- 210 g Parsley(10g)
- 31 Egg(50g)
- 450 g Grated Parmigiano Reggiano(50g)
- 54 tablespoon Breadcrumbs(32g)
- 60.5 lemon Lemon zest(2g)
- 71 clove Garlic(5g)
- 8250 g Coconut milk(250g)
- 91 tablespoon Green curry paste(18g)
- 102 tablespoon Extra virgin olive oil(18g)
- 111 teaspoon Salt(6g)
Instructions
- 1In a large bowl, combine the boiled broccoli, chopped parsley, egg, grated Parmigiano Reggiano, breadcrumbs, lemon zest, minced garlic, and salt.
- 2Mix and mash the ingredients well until you get a compact mixture. Adjust the amount of breadcrumbs if the mixture is too soft.
- 3Form small patties with your hands.
- 4Heat extra virgin olive oil in a pan over medium heat.
- 5Add the green curry paste and cook for 2 minutes, stirring.
- 6Pour in the coconut milk and bring to a gentle simmer.
- 7Add the vegetable patties to the pan and cook for about 5-7 minutes, turning occasionally, until heated through and slightly golden.
- 8Serve hot with the curry sauce.
