Ingredients

  • 1600 g Boiled broccoli(600g)
  • 210 g Parsley(10g)
  • 31 Egg(50g)
  • 450 g Grated Parmigiano Reggiano(50g)
  • 54 tablespoon Breadcrumbs(32g)
  • 60.5 lemon Lemon zest(2g)
  • 71 clove Garlic(5g)
  • 8250 g Coconut milk(250g)
  • 91 tablespoon Green curry paste(18g)
  • 102 tablespoon Extra virgin olive oil(18g)
  • 111 teaspoon Salt(6g)

Instructions

  1. 1In a large bowl, combine the boiled broccoli, chopped parsley, egg, grated Parmigiano Reggiano, breadcrumbs, lemon zest, minced garlic, and salt.
  2. 2Mix and mash the ingredients well until you get a compact mixture. Adjust the amount of breadcrumbs if the mixture is too soft.
  3. 3Form small patties with your hands.
  4. 4Heat extra virgin olive oil in a pan over medium heat.
  5. 5Add the green curry paste and cook for 2 minutes, stirring.
  6. 6Pour in the coconut milk and bring to a gentle simmer.
  7. 7Add the vegetable patties to the pan and cook for about 5-7 minutes, turning occasionally, until heated through and slightly golden.
  8. 8Serve hot with the curry sauce.
