Stretched Breadsticks (Grissini Stirati)
Ingredients
- 1500 g flour(500g)
- 2290 g water(290g)
- 315 g fresh brewer's yeast(15g)
- 48 g salt(8g)
- 550 ml extra virgin olive oil(46g)
- 630 g semolina flour(30g)
- 72 teaspoon rosemary(4g)
- 82 tablespoon pecorino cheese(16g)
- 91 teaspoon black pepper(2g)
- 101 teaspoon turmeric(3g)
Instructions
- 1In a bowl or stand mixer, combine the flour and yeast.
- 2Add the water gradually, then pour in the olive oil.
- 3Add the salt last and knead until a smooth dough forms.
- 4Divide the dough into three parts for different flavors.
- 5Mix rosemary into one part, pecorino cheese and black pepper into the second, and turmeric (with a pinch of black pepper) into the third.
- 6Shape each flavored dough into a ball.
- 7Sprinkle semolina flour onto a tray or baking sheet.
- 8Place the dough balls spaced apart on the tray, cover with plastic wrap, and let rest for about 50 minutes.
- 9After resting, sprinkle more semolina flour on each dough ball.
- 10Cut the dough into strips using a dough scraper.
- 11Stretch each strip gently to form breadsticks.
- 12Arrange the breadsticks on a baking sheet.
- 13Bake in a ventilated oven at 190°C (375°F) for about 15 minutes, checking for doneness.
- 14Let the breadsticks cool before serving.
