- 22 lb Ground beef(907g)
- 31 packet Taco seasoning(28g)
- 44 Tomatoes(480g)
- 50.5 White onion(60g)
- 60.5 bunch Cilantro(25g)
- 72 Lime(120g)
- 84 tablespoon Sour cream (light)(60g)
- 92 tablespoon Chipotle sauce(30g)
- 101 cup Taco blend cheese(113g)
- 111 teaspoon Paprika(2g)
- 120.25 teaspoon Black pepper(0.5g)
- 131 teaspoon Salt(6g)
- 141 teaspoon Garlic powder(3g)
Instructions
- 1Preheat oven to 425°F (220°C).
- 2Peel and chop the potatoes. Toss with paprika, black pepper, and a pinch of salt.
- 3Spread potatoes on a baking sheet and bake for 30-40 minutes until golden and tender.
- 4In a skillet over medium heat, cook the ground beef until browned. Add taco seasoning and cook until fully done.
- 5Dice tomatoes, onion, and cilantro. Mix together with lime juice, salt, and garlic powder to make pico de gallo.
- 6In a small bowl, mix sour cream and chipotle sauce with a splash of water, garlic powder, and salt to make chipotle sauce.
- 7Divide roasted potatoes, ground beef, and pico de gallo into 5 meal prep containers.
- 8Top each bowl with taco blend cheese and a dollop of chipotle sauce (optional).
- 9Cover and refrigerate until ready to eat.
