Ingredients

  • 14 cup All-purpose flour(500g)
  • 21.5 cup Water(360g)
  • 30.5 cup Sourdough starter(120g)
  • 42 teaspoon Salt(10g)
  • 52 tablespoon Sugar(25g)

Instructions

  1. 1In a large bowl, mix the sourdough starter, water, and sugar until combined.
  2. 2Add the flour and salt, then knead until a smooth dough forms.
  3. 3Cover and let the dough rise for 4-6 hours or until doubled in size.
  4. 4Divide the dough into 8 equal pieces and shape each into a bagel.
  5. 5Let the shaped bagels rest for 30 minutes.
  6. 6Preheat oven to 425°F (220°C).
  7. 7Boil each bagel in water for 1 minute per side.
  8. 8Place boiled bagels on a parchment-lined baking sheet.
