Blackberries and Dumplings
Ingredients
- 14 cup blackberries(600g)
- 21 cup sugar(200g)
- 32 cup water(480g)
- 41 tablespoon lemon juice(15g)
- 51 teaspoon lemon zest(2g)
- 62 cup flour(250g)
- 70.25 cup sugar(50g)
- 81.5 teaspoon baking powder(6g)
- 90.5 teaspoon salt(3g)
- 100.25 teaspoon nutmeg(0.5g)
- 110.75 cup milk(180g)
- 121 egg(50g)
- 131 teaspoon vanilla(4g)
Instructions
- 1In a large pot, combine blackberries, 1 cup sugar, water, lemon juice, and lemon zest.
- 2Simmer over medium heat until the blackberries are juicy and the sugar is dissolved, about 10 minutes.
- 3In a bowl, mix flour, 0.25 cup sugar, baking powder, salt, and nutmeg.
- 4In a separate bowl, whisk together milk, egg, and vanilla.
- 5Add the wet ingredients to the dry ingredients and mix until just combined to form a soft dough.
- 6Drop spoonfuls of the dumpling dough into the simmering blackberry mixture. Do not stir.
- 7Cover the pot and cook for 15 minutes.
- 8Uncover and simmer for an additional 5 minutes. Optionally, gently flip dumplings to absorb more syrup.
- 9Serve warm with plenty of blackberry syrup.
