Ingredients

  • 12 pound boneless skinless chicken breast(907g)
  • 22 cup milk or buttermilk(480g)
  • 31 large egg(50g)
  • 42 teaspoon salt(12g)
  • 51 teaspoon MSG (monosodium glutamate)(4g)
  • 64 cup peanut oil (for frying)(880g)
  • 71.5 cup all-purpose flour(180g)
  • 82 tablespoon powdered sugar(16g)
  • 92 teaspoon paprika(4g)
  • 101 teaspoon salt(6g)
  • 111 teaspoon black pepper(2g)
  • 120.5 teaspoon baking soda(2g)
  • 131 teaspoon MSG (monosodium glutamate)(4g)

Instructions

  1. 1Cut the chicken breast into nugget-sized pieces and place in a mixing bowl.
  2. 2Add milk or buttermilk, egg, 2 teaspoons salt, and 1 teaspoon MSG to the bowl. Mix well to combine.
  3. 3Cover the bowl and marinate the chicken in the refrigerator for at least 30 minutes.
  4. 4Heat peanut oil in a deep pot to 350°F (175°C).
  5. 5In a separate bowl, combine flour, powdered sugar, paprika, 1 teaspoon salt, black pepper, baking soda, and 1 teaspoon MSG. Stir to mix.
  6. 6Working in batches, dredge the marinated chicken pieces in the flour mixture, coating well.
  7. 7Fry the coated chicken pieces in the hot oil until golden brown and cooked through, about 3-4 minutes per batch.
  8. 8Transfer cooked nuggets to a paper towel-lined plate to drain excess oil.
