Polish Apple Pancakes (Racuchy)
Ingredients
- 140 g fresh yeast(40g)
- 2125 ml warm milk(128g)
- 31 teaspoon sugar(4g)
- 42 tablespoon wheat flour(16g)
- 53 cup wheat flour(375g)
- 62 tablespoon sugar(24g)
- 7250 ml warm milk(256g)
- 81 egg(50g)
- 92 apple(300g)
- 100.5 cup oil(110g)
- 112 tablespoon powdered sugar(16g)
Instructions
- 1In a bowl, dissolve the fresh yeast in 125 ml of warm milk. Add 1 teaspoon of sugar and 2 tablespoons of flour. Mix well to combine.
- 2Set the mixture aside for 15 minutes to allow the yeast to activate.
- 3In a large bowl, combine 3 cups of wheat flour, 2 tablespoons of sugar, 250 ml of warm milk, and 1 egg.
- 4Add the activated yeast mixture (starter) to the bowl with the other ingredients. Mix until a smooth batter forms.
- 5Cover the bowl and let the batter rise in a warm place for 1 hour.
- 6Peel and dice the apples. Add them to the risen batter and mix gently.
- 7Let the batter rest for another 30 minutes.
- 8Heat oil in a frying pan over medium heat.
- 9Spoon portions of the batter into the hot oil and fry the pancakes on both sides until golden brown.
- 10Remove the pancakes and drain on paper towels.
- 11Sprinkle with powdered sugar before serving.
