Ingredients

  • 140 g fresh yeast(40g)
  • 2125 ml warm milk(128g)
  • 31 teaspoon sugar(4g)
  • 42 tablespoon wheat flour(16g)
  • 53 cup wheat flour(375g)
  • 62 tablespoon sugar(24g)
  • 7250 ml warm milk(256g)
  • 81 egg(50g)
  • 92 apple(300g)
  • 100.5 cup oil(110g)
  • 112 tablespoon powdered sugar(16g)

Instructions

  1. 1In a bowl, dissolve the fresh yeast in 125 ml of warm milk. Add 1 teaspoon of sugar and 2 tablespoons of flour. Mix well to combine.
  2. 2Set the mixture aside for 15 minutes to allow the yeast to activate.
  3. 3In a large bowl, combine 3 cups of wheat flour, 2 tablespoons of sugar, 250 ml of warm milk, and 1 egg.
  4. 4Add the activated yeast mixture (starter) to the bowl with the other ingredients. Mix until a smooth batter forms.
  5. 5Cover the bowl and let the batter rise in a warm place for 1 hour.
  6. 6Peel and dice the apples. Add them to the risen batter and mix gently.
  7. 7Let the batter rest for another 30 minutes.
  8. 8Heat oil in a frying pan over medium heat.
  9. 9Spoon portions of the batter into the hot oil and fry the pancakes on both sides until golden brown.
  10. 10Remove the pancakes and drain on paper towels.
  11. 11Sprinkle with powdered sugar before serving.
