Easy and Fresh Lemon Icebox Pie (Carlota de Limón)
Ingredients
- 11 cup heavy cream(240g)
- 21 can sweetened condensed milk(375g)
- 31 can evaporated milk(340g)
- 460 ml lime juice(60g)
- 51 teaspoon vanilla extract(4g)
- 6200 g vanilla cookies(200g)
- 71 tablespoon lime zest(6g)
Instructions
- 1In a large bowl, combine the heavy cream, sweetened condensed milk, evaporated milk, and vanilla extract.
- 2Mix until well combined.
- 3Add the lime juice and mix until the mixture thickens and becomes creamy.
- 4Spread a thin layer of the cream mixture at the bottom of a rectangular or round dish.
- 5Arrange a layer of vanilla cookies over the cream.
- 6Add another layer of the cream mixture over the cookies and spread evenly.
- 7Repeat layers of cookies and cream until all ingredients are used, finishing with a layer of cream on top.
- 8Sprinkle lime zest over the top layer.
- 9Freeze for at least 4 hours or overnight until firm.
- 10Decorate with extra cookies and lime slices if desired. Slice and serve cold.
