Instructions
1Preheat oven to 325°F (163°C).
2Line an 8x8 inch baking pan with parchment paper.
3In a bowl, mix the dry ingredients: oats, desiccated coconut, chopped pecans, chopped walnuts, protein powder (dry), and a pinch of sea salt. Set aside the chocolate chips.
4In a saucepan, gently warm the butter or coconut oil, peanut butter, and honey over low heat until smooth.
5Remove from heat and allow to cool slightly. Stir in the vanilla extract.
6In a separate bowl, mix the protein powder (wet) with water or milk until smooth, then add to the wet mixture.
7Combine the wet and dry ingredients (except chocolate chips) and mix until well combined.
8Fold in the chocolate chips.
9Press the mixture evenly into the prepared baking pan.
10Bake for 20-30 minutes, baking longer for crunchier bars and less for chewier bars, until just turning golden.
11Sprinkle with additional sea salt if desired.
12Allow to cool slightly before cutting into bars.
