  • 1650 g chicken breast(650g)
  • 21 teaspoon garlic powder(3g)
  • 31 teaspoon onion powder(3g)
  • 40.5 teaspoon cayenne pepper(1.5g)
  • 51 teaspoon salt(6g)
  • 61 teaspoon black pepper(2g)
  • 72 second spray cooking spray (avocado oil)(4g)
  • 8200 ml light evaporated milk(210g)
  • 9100 g tomato sauce/passata(100g)
  • 10120 ml chicken stock (low sodium)(120g)
  • 1180 g light cream cheese(80g)
  • 1280 ml pasta water(80g)
  • 1340 g Parmesan cheese(40g)
  • 141 teaspoon paprika(3g)
  • 150.5 teaspoon salt (for sauce)(3g)
  • 164 garlic cloves(12g)
  • 171 teaspoon chilli flakes(2g)
  • 1815 g light butter(15g)

Instructions

  1. 1Cook penne pasta according to package instructions. Reserve 80ml of pasta water.
  2. 2Season diced chicken breast with garlic powder, onion powder, cayenne pepper, salt, and black pepper.
  3. 3Heat a non-stick pan and spray with avocado oil cooking spray.
  4. 4Add seasoned chicken breast and cook until browned and cooked through. Remove and set aside.
  5. 5In the same pan, add light butter and minced garlic cloves. Sauté until fragrant.
  6. 6Add tomato sauce/passata, evaporated milk, chicken stock, cream cheese, paprika, chilli flakes, and salt. Stir until smooth and creamy.
  7. 7Add reserved pasta water and Parmesan cheese. Stir to combine.
  8. 8Return cooked chicken to the pan and simmer for a few minutes.
  9. 9Add cooked penne pasta and toss to coat in the sauce.
  10. 10Serve garnished with fresh chopped parsley and extra Parmesan cheese.
  11. 11Store leftovers in meal prep containers in the refrigerator for up to 5 days.
  12. 12To reheat, microwave with a damp paper towel over the top for 3-4 minutes, stir until creamy, and enjoy.
