Ingredients

  • 11 zucchini(250g)
  • 21 egg(50g)
  • 350 g grated Parmesan cheese(50g)
  • 41 teaspoon salt(5g)
  • 50.25 teaspoon black pepper(0.5g)

Instructions

  1. 1Preheat the oven to 200°C (390°F) and line a baking tray with parchment paper.
  2. 2Grate the zucchini and squeeze out excess water using a clean towel.
  3. 3In a bowl, mix the grated zucchini, egg, grated Parmesan cheese, salt, and black pepper until well combined.
  4. 4Divide the mixture into 6 portions and shape each into a small round taco shell on the baking tray.
  5. 5Bake for about 8-10 minutes or until the edges are golden and the tacos are set.
  6. 6Let cool slightly, then carefully remove the tacos from the tray and shape them while warm if desired.
  7. 7Fill with your favorite toppings and serve.
