Ingredients
- 1500 g all-purpose flour (type 45)(500g)
- 21 tablespoon salt(18g)
- 31 teaspoon brown sugar or sugar(4g)
- 45 g instant dry yeast(5g)
- 5300 ml warm water(300g)
- 6150 ml warm milk(154g)
- 71 teaspoon flour (for brushing)(3g)
- 860 ml cold water (for brushing)(60g)
Instructions
- 1In a large bowl, mix the flour, salt, sugar, and dry yeast.
- 2Add the warm water and warm milk. Mix until a dough forms.
- 3Knead the dough for about 10 minutes until smooth and elastic.
- 4Cover the dough and let it rise in a warm place for 1 hour, or until doubled in size.
- 5Divide the dough into 4 equal pieces and shape into round rolls.
- 6Place the rolls on a baking tray lined with parchment paper.
- 7Mix 1 teaspoon of flour with 1/2 glass (about 60 ml) of cold water to make a brushing mixture.
- 8Brush the tops of the rolls with the flour-water mixture.
- 9Preheat the oven to 250°C (fan-forced).
- 10Bake the rolls for 10 minutes until golden and cooked through.
- 11Let cool slightly before serving.
