Instructions

  1. 1Blend all falafel ingredients (except olive oil) in a food processor until slightly chunky.
  2. 2Form the mixture into small balls and chill for 20 minutes.
  3. 3Heat olive oil in a pan and cook falafel for 3–4 minutes per side until golden brown.
  4. 4Blend all hummus ingredients until smooth, adding water as needed for consistency.
  5. 5Assemble the bowl with mixed greens, cucumber slices, cherry tomatoes, falafel, and a dollop of hummus.
  6. 6Garnish with smoked paprika and a drizzle of olive oil. Add vegan feta if desired. Enjoy!
