Vegan Mediterranean Mezze Bowl
Ingredients
- 1400 g chickpeas (for falafel)(400g)
- 20.5 onion(50g)
- 32 garlic cloves (for falafel)(6g)
- 40.5 cup fresh parsley(15g)
- 50.5 teaspoon cumin (for falafel)(1g)
- 60.5 teaspoon coriander(1g)
- 72 tablespoon chickpea flour(14g)
- 80.5 teaspoon salt(3g)
- 90.25 teaspoon black pepper(1g)
- 101 tablespoon olive oil (for frying falafel)(13.5g)
- 11400 g chickpeas (for hummus)(400g)
- 122 tablespoon tahini(30g)
- 131 tablespoon olive oil (for hummus)(13.5g)
- 142 tablespoon lemon juice(30g)
- 151 garlic clove (for hummus)(3g)
- 160.5 teaspoon cumin (for hummus)(1g)
- 170.5 teaspoon salt (for hummus)(3g)
- 182 cup mixed greens(60g)
- 190.5 cucumber(100g)
- 201 cup cherry tomatoes(150g)
- 2150 g vegan feta (optional)(50g)
- 220.5 teaspoon smoked paprika(1g)
Instructions
- 1Blend all falafel ingredients (except olive oil) in a food processor until slightly chunky.
- 2Form the mixture into small balls and chill for 20 minutes.
- 3Heat olive oil in a pan and cook falafel for 3–4 minutes per side until golden brown.
- 4Blend all hummus ingredients until smooth, adding water as needed for consistency.
- 5Assemble the bowl with mixed greens, cucumber slices, cherry tomatoes, falafel, and a dollop of hummus.
- 6Garnish with smoked paprika and a drizzle of olive oil. Add vegan feta if desired. Enjoy!
