Lentejas Charras (Mexican Charro Lentils)
Ingredients
- 11 lb lentils(454g)
- 23 bay leaves(2g)
- 31 teaspoon salt(6g)
- 40.25 white onion(30g)
- 512 oz bacon(340g)
- 610 oz chorizo(284g)
- 74 wieners(160g)
- 83 garlic cloves(9g)
- 90.25 white onion(30g)
- 101 jalapeño(15g)
- 113 Mexican green onions(45g)
- 121 roma tomato(60g)
- 130.25 teaspoon black pepper(1g)
- 140.25 bunch cilantro(10g)
- 158 cup water(1920g)
Instructions
- 1Set a large pot to medium heat and add 8 cups of water.
- 2Once the water is boiling, add 1 lb lentils, 3 bay leaves, salt to taste, and a small piece of white onion.
- 3Cover and cook for about 20 minutes until lentils are tender.
- 4Meanwhile, in a separate pan over medium heat, cook 12 oz bacon for about 4 minutes.
- 5Add 10 oz chorizo, break it up, and cook for another 4 minutes.
- 6Add 4 wieners and cook until browned.
- 7Add 3 minced garlic cloves, 1/4 white onion, and 1 jalapeño. Mix and cook for 1 minute.
- 8Add 3 Mexican green onions and 1 roma tomato. Mix well.
- 9Season with some black pepper and continue cooking for about 3 minutes.
- 10Remove the onion and bay leaves from the cooked lentils.
- 11Add the cooked lentils to the pan with the meat and vegetables. Mix well.
- 12Check for salt and adjust as needed.
- 13Add a small bunch of cilantro, cover, and cook for an additional 5 minutes.
- 14Serve hot.
