  • 14 medium sweet potatoes(900g)
  • 21.5 tablespoon olive oil(20g)

  • 51 small onion(70g)

Instructions

  1. 1Preheat oven to 400°F (200°C). Wash sweet potatoes and rub with 1.5 tablespoons olive oil. Sprinkle with salt.
  2. 2Place sweet potatoes on a baking sheet and bake for 45-55 minutes, until very soft inside.
  3. 3While potatoes bake, heat 1 tablespoon olive oil in a pan over medium heat. Add chopped onion and cook for 3-4 minutes until soft.
  4. 4Add minced garlic and cook for 30 seconds. Add ground beef, season with salt, black pepper, and smoked paprika. Cook for 6-8 minutes until browned.
  5. 5Stir in baby spinach and cook for 1 minute until wilted. Set beef filling aside.
  6. 6Remove sweet potatoes from oven. Slice each lengthwise. Add butter to each and mash the inside with a fork until creamy.
  7. 7Top each potato with beef filling and sprinkle with shredded cheese.
  8. 8Return potatoes to oven and bake for 8-10 minutes, until cheese is melted.
  9. 9Top with sour cream and green onions. Serve with guacamole and salsa, or with diced tomato, avocado, and corn as desired.
