- 14 medium sweet potatoes(900g)
- 21.5 tablespoon olive oil(20g)

- 41 pound ground beef(450g)
- 51 small onion(70g)
- 62 clove garlic(6g)

- 80.5 teaspoon black pepper(1g)
- 91 teaspoon smoked paprika(2g)
- 102 cup baby spinach(60g)
- 112.5 tablespoon butter(35g)
- 121.5 cup shredded cheese(150g)
- 134 tablespoon sour cream(60g)
- 142 green onions(20g)
- 154 tablespoon guacamole(60g)

Instructions
- 1Preheat oven to 400°F (200°C). Wash sweet potatoes and rub with 1.5 tablespoons olive oil. Sprinkle with salt.
- 2Place sweet potatoes on a baking sheet and bake for 45-55 minutes, until very soft inside.
- 3While potatoes bake, heat 1 tablespoon olive oil in a pan over medium heat. Add chopped onion and cook for 3-4 minutes until soft.
- 4Add minced garlic and cook for 30 seconds. Add ground beef, season with salt, black pepper, and smoked paprika. Cook for 6-8 minutes until browned.
- 5Stir in baby spinach and cook for 1 minute until wilted. Set beef filling aside.
- 6Remove sweet potatoes from oven. Slice each lengthwise. Add butter to each and mash the inside with a fork until creamy.
- 7Top each potato with beef filling and sprinkle with shredded cheese.
- 8Return potatoes to oven and bake for 8-10 minutes, until cheese is melted.
- 9Top with sour cream and green onions. Serve with guacamole and salsa, or with diced tomato, avocado, and corn as desired.
