Arugula Salad with Lime Maple Vinaigrette
Ingredients
- 14 cup arugula(80g)
- 21 cup pineapple(165g)
- 30.5 cup raspberries(60g)
- 41 peaches(150g)
- 52 tablespoon lime juice(30g)
- 61 tablespoon maple syrup(20g)
- 72 tablespoon olive oil(27g)
- 80.25 teaspoon salt(1.5g)
- 90.25 teaspoon black pepper(0.5g)
Instructions
- 1If desired, grill the pineapple, raspberries, and peaches on a grill or in a cast iron pan until lightly charred.
- 2In a small bowl, whisk together lime juice, maple syrup, olive oil, salt, and black pepper to make the vinaigrette.
- 3Place arugula in a large salad bowl.
- 4Add the grilled or fresh fruit to the arugula.
- 5Drizzle the lime maple vinaigrette over the salad.
- 6Toss gently to combine and serve immediately.
