Ingredients

  • 1300 g chicken breast(300g)
  • 21 teaspoon smoked paprika(2g)
  • 30.5 teaspoon salt(3g)
  • 41 teaspoon all-purpose seasoning(3g)
  • 52 tablespoon panko breadcrumbs(12g)
  • 62 tablespoon all-purpose flour(16g)
  • 750 g parmesan cheese(50g)
  • 8500 ml oil for frying(460g)

Instructions

  1. 1Cut the chicken breast into small pieces.
  2. 2Place the chicken pieces in a blender or food processor and blend until finely ground.
  3. 3Transfer the ground chicken to a bowl.
  4. 4Add smoked paprika, salt, all-purpose seasoning, and grated parmesan cheese to the chicken. Mix well.
  5. 5Add the panko breadcrumbs and all-purpose flour. Mix everything together by hand until a dough forms.
  6. 6Place the mixture onto a sheet of plastic wrap and shape it into a rectangle.
  7. 7Cover with plastic wrap and freeze for 20 minutes to firm up.
  8. 8Remove from the freezer and cut the mixture into sticks.
  9. 9Heat oil in a frying pan over medium heat.
  10. 10Fry the chicken sticks until golden brown and cooked through.
  11. 11Drain on paper towels and serve hot. Optionally, serve with a sauce made from ketchup, mayonnaise, and mustard.
