Ingredients

  • 1230 g Unsalted Butter(230g)
  • 2160 g Caster Sugar(160g)
  • 3160 g Light Brown Sugar(160g)
  • 4450 g Chocolate Chunks or Chips(450g)
  • 5475 g Plain Flour(475g)
  • 61 teaspoon Salt(6g)
  • 73 teaspoon Baking Powder(12g)
  • 80.75 teaspoon Baking Soda(4g)
  • 92 Eggs(100g)
  • 101 Egg Yolk(18g)
  • 111 teaspoon Vanilla Extract(5g)

Instructions

  1. 1In a large mixing bowl, add the cold cubed butter and whisk until slightly creamy.
  2. 2Add the caster sugar and light brown sugar, then whisk together until well combined and fluffy.
  3. 3Add the eggs, egg yolk, vanilla extract, and chocolate chips or chunks. Whisk until fully incorporated.
  4. 4Add the plain flour, baking powder, baking soda, and salt. Gently mix until just combined, do not overmix.
  5. 5Portion the dough into 75-80g balls.
  6. 6Place the cookie dough balls onto a tray and freeze for at least 30 minutes or overnight for best results.
  7. 7Preheat oven to 165-170°C.
  8. 8Bake for 10-15 minutes or until the tops are lightly golden while the centres remain soft.
  9. 9Remove from the oven and let cool slightly.
