Peanut Butter Chilli Beef Noodles
Ingredients
- 11 teaspoon Groundnut oil(4.5g)
- 2200 g Beef mince (5% fat)(200g)
- 30.5 teaspoon Salt(3g)
- 44 Garlic cloves, finely chopped(12g)
- 52 tablespoon Light soy sauce(30g)
- 61.5 tablespoon Peanut butter(24g)
- 73 Spring onion, thinly sliced(45g)
- 80.5 tablespoon Crispy chilli oil(7g)
- 91 teaspoon Gochugaru (or mild chilli powder)(2g)
- 100.5 tablespoon Sesame seeds(4g)
- 110.5 tablespoon Honey(11g)
- 121 tablespoon Rice wine vinegar(15g)
- 130.5 tablespoon Groundnut oil (for noodles)(6.75g)
- 14150 g Noodles(150g)
- 150.5 Cucumber, sliced(100g)
Instructions
- 1Heat 1 teaspoon groundnut oil in a pan over medium-high heat.
- 2Add the beef mince and cook until browned, breaking it up with a spoon.
- 3Season the beef with 0.5 teaspoon salt and add 2 finely chopped garlic cloves. Stir-fry for 1-2 minutes.
- 4Add 1 tablespoon light soy sauce to the beef, stir, and cook for another minute. Set aside.
- 5Cook the noodles according to package instructions, then drain.
- 6In a bowl, mix peanut butter, 2 finely chopped garlic cloves, spring onion, crispy chilli oil, gochugaru, sesame seeds, honey, rice wine vinegar, 1 tablespoon light soy sauce, and 0.5 tablespoon groundnut oil to make the sauce.
- 7Toss the cooked noodles in the sauce until well coated.
- 8Add the cooked beef to the noodles and mix well.
- 9Serve the noodles topped with sliced cucumber.
