Strawberry Lemonade Concentrate
Ingredients
- 14 cup lemon juice(960g)
- 26 cup strawberries(900g)
- 36 cup sugar(1200g)
Instructions
- 1Juice enough lemons to yield 4 cups of lemon juice.
- 2Add 6 cups of strawberries to a blender and blend until smooth.
- 3Combine the blended strawberries and lemon juice. Strain the mixture to remove seeds and pulp.
- 4Mix the strained juice and strawberry mixture thoroughly.
- 5Prepare a water bath canner.
- 6Pour the mixture into a large pot and strain again to remove any remaining seeds or pulp.
- 7Heat the mixture gently until warm (do not boil or simmer).
- 8Add 6 cups of sugar and stir until completely dissolved.
- 9Once the mixture is warm and the sugar is dissolved, remove from heat.
- 10Pour the concentrate into sterilized jars.
- 11Process the jars in a boiling water bath for 15 minutes (start timing once the water reaches a boil).
- 12Remove jars and let cool for 24 hours.
- 13To serve, mix 1 part concentrate with 3 parts water and enjoy.
