Ingredients

  • 14 cup lemon juice(960g)
  • 26 cup strawberries(900g)
  • 36 cup sugar(1200g)

Instructions

  1. 1Juice enough lemons to yield 4 cups of lemon juice.
  2. 2Add 6 cups of strawberries to a blender and blend until smooth.
  3. 3Combine the blended strawberries and lemon juice. Strain the mixture to remove seeds and pulp.
  4. 4Mix the strained juice and strawberry mixture thoroughly.
  5. 5Prepare a water bath canner.
  6. 6Pour the mixture into a large pot and strain again to remove any remaining seeds or pulp.
  7. 7Heat the mixture gently until warm (do not boil or simmer).
  8. 8Add 6 cups of sugar and stir until completely dissolved.
  9. 9Once the mixture is warm and the sugar is dissolved, remove from heat.
  10. 10Pour the concentrate into sterilized jars.
  11. 11Process the jars in a boiling water bath for 15 minutes (start timing once the water reaches a boil).
  12. 12Remove jars and let cool for 24 hours.
  13. 13To serve, mix 1 part concentrate with 3 parts water and enjoy.
