Honey Lime Chicken Enchiladas
Ingredients
- 14 cup Rotisserie chicken, chopped(600g)
- 20.67 cup Honey(225g)
- 32 tablespoon Chili powder(16g)
- 40.5 cup Lime juice(120g)
- 51 teaspoon Crystallized lime powder(4g)
- 628 ounce Green enchilada sauce(794g)
- 72 cup Monterey Jack cheese, shredded(200g)
- 810 Flour tortillas(600g)
- 91 cup Heavy whipping cream(240g)
Instructions
- 1Preheat oven to 350°F (175°C).
- 2In a large bowl, combine chopped rotisserie chicken, honey, chili powder, lime juice, and crystallized lime powder. Mix well.
- 3Add one third of the green enchilada sauce to the chicken mixture and stir to combine.
- 4Pour about half a cup of enchilada sauce into the bottom of two baking trays (each slightly smaller than 9x13 inches).
- 5Fill each flour tortilla with the chicken mixture and some Monterey Jack cheese. Roll up and place seam side down in the trays.
- 6Pour the remaining enchilada sauce evenly over the top of the enchiladas.
- 7Pour the heavy whipping cream over the enchiladas.
- 8Sprinkle the remaining Monterey Jack cheese on top.
- 9Bake uncovered for 25 to 30 minutes, until bubbly and golden.
- 10Let cool slightly before serving.
