Ingredients

  • 1220 g dry macaroni(220g)
  • 216 bacon medallions rashers(320g)
  • 32 onions, diced(300g)
  • 4300 ml skimmed milk(309g)
  • 5160 g lightest cream cheese(160g)
  • 6500 ml chicken stock(500g)
  • 73 teaspoon Worcestershire sauce(18g)
  • 82 teaspoon mustard(10g)
  • 9100 g lighter cheddar cheese(100g)
  • 102 teaspoon garlic, Italian herbs and paprika(6g)
  • 11300 g tenderstem broccoli(300g)

Instructions

  1. 1Chop the bacon medallions and dice the onions.
  2. 2In a large pan, cook the bacon over medium heat until starting to brown.
  3. 3Add the diced onions and cook until softened.
  4. 4Add the dry macaroni, skimmed milk, chicken stock, Worcestershire sauce, mustard, garlic, Italian herbs, and paprika to the pan.
  5. 5Stir well and bring to a simmer.
  6. 6Add the cream cheese and 60g of the lighter cheddar cheese (reserve 40g for topping). Stir until melted and combined.
  7. 7Add the tenderstem broccoli and cover the pan. Cook for 8-10 minutes, stirring occasionally, until the pasta is cooked and the sauce is thickened.
  8. 8Sprinkle the reserved 40g cheddar cheese on top and allow to melt before serving.
  9. 9Divide into 4 portions and serve.
