High Protein One Pan Mac & Cheese Meal Prep
Ingredients
- 1220 g dry macaroni(220g)
- 216 bacon medallions rashers(320g)
- 32 onions, diced(300g)
- 4300 ml skimmed milk(309g)
- 5160 g lightest cream cheese(160g)
- 6500 ml chicken stock(500g)
- 73 teaspoon Worcestershire sauce(18g)
- 82 teaspoon mustard(10g)
- 9100 g lighter cheddar cheese(100g)
- 102 teaspoon garlic, Italian herbs and paprika(6g)
- 11300 g tenderstem broccoli(300g)
Instructions
- 1Chop the bacon medallions and dice the onions.
- 2In a large pan, cook the bacon over medium heat until starting to brown.
- 3Add the diced onions and cook until softened.
- 4Add the dry macaroni, skimmed milk, chicken stock, Worcestershire sauce, mustard, garlic, Italian herbs, and paprika to the pan.
- 5Stir well and bring to a simmer.
- 6Add the cream cheese and 60g of the lighter cheddar cheese (reserve 40g for topping). Stir until melted and combined.
- 7Add the tenderstem broccoli and cover the pan. Cook for 8-10 minutes, stirring occasionally, until the pasta is cooked and the sauce is thickened.
- 8Sprinkle the reserved 40g cheddar cheese on top and allow to melt before serving.
- 9Divide into 4 portions and serve.
