Instructions

  1. 1Preheat the oven to 350°F (175°C). Grease and line two 8-inch round cake pans.
  2. 2In a large bowl, whisk together flour, granulated sugar, cocoa powder, baking powder, baking soda, and salt.
  3. 3Add eggs, milk, vegetable oil, and vanilla extract. Mix until combined.
  4. 4Pour in boiling water and mix until smooth. The batter will be thin.
  5. 5Divide the batter evenly between the prepared pans.
  6. 6Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  7. 7Let cakes cool in the pans for 10 minutes, then turn out onto a wire rack to cool completely.
  8. 8Brew 1 cup of espresso or strong coffee. Steep chai tea bags in the hot coffee for 5 minutes, then remove the bags and let the mixture cool.
  9. 9In a mixing bowl, beat mascarpone cheese, heavy cream, powdered sugar, and cinnamon until stiff peaks form.
  10. 10Place one cake layer on a serving plate. Brush generously with half of the chai-coffee mixture.
  11. 11Spread half of the mascarpone cream over the cake.
  12. 12Place the second cake layer on top. Brush with the remaining chai-coffee mixture.
  13. 13Spread the remaining mascarpone cream over the top and sides of the cake.
  14. 14Dust the top with cocoa powder before serving.
