Dirty Chai Tiramisu Chocolate Cake

- 22 cup Granulated sugar(400g)
- 30.75 cup Cocoa powder(75g)
- 42 teaspoon Baking powder(8g)
- 51.5 teaspoon Baking soda(7g)
- 61 teaspoon Salt(6g)
- 72 Eggs(100g)
- 81 cup Whole milk(240g)
- 90.5 cup Vegetable oil(110g)
- 102 teaspoon Vanilla extract(8g)
- 111 cup Boiling water(240g)
- 121 cup Espresso or strong coffee(240g)
- 132 Chai tea bags(4g)
- 141 cup Mascarpone cheese(225g)
- 151 cup Heavy cream(240g)
- 160.5 cup Powdered sugar(60g)
- 171 teaspoon Cinnamon(2.5g)
- 181 tablespoon Cocoa powder (for dusting)(7g)
Instructions
- 1Preheat the oven to 350°F (175°C). Grease and line two 8-inch round cake pans.
- 2In a large bowl, whisk together flour, granulated sugar, cocoa powder, baking powder, baking soda, and salt.
- 3Add eggs, milk, vegetable oil, and vanilla extract. Mix until combined.
- 4Pour in boiling water and mix until smooth. The batter will be thin.
- 5Divide the batter evenly between the prepared pans.
- 6Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
- 7Let cakes cool in the pans for 10 minutes, then turn out onto a wire rack to cool completely.
- 8Brew 1 cup of espresso or strong coffee. Steep chai tea bags in the hot coffee for 5 minutes, then remove the bags and let the mixture cool.
- 9In a mixing bowl, beat mascarpone cheese, heavy cream, powdered sugar, and cinnamon until stiff peaks form.
- 10Place one cake layer on a serving plate. Brush generously with half of the chai-coffee mixture.
- 11Spread half of the mascarpone cream over the cake.
- 12Place the second cake layer on top. Brush with the remaining chai-coffee mixture.
- 13Spread the remaining mascarpone cream over the top and sides of the cake.
- 14Dust the top with cocoa powder before serving.
