Ingredients

  • 14 eggs(240g)
  • 250 g sugar(50g)
  • 360 ml oil(55g)
  • 460 ml milk(62g)
  • 580 g flour(80g)
  • 620 g unsweetened cocoa(20g)
  • 7150 g white chocolate ganache(150g)

Instructions

  1. 1Separate the egg whites from the yolks of 4 eggs.
  2. 2Whip the egg whites with 50g of sugar to make a small meringue.
  3. 3Add 60ml of oil and 60ml of milk to the egg yolks.
  4. 4Incorporate 80g of flour and 20g of unsweetened cocoa.
  5. 5Gently fold in the meringue into the mixture.
  6. 6Pour the batter into a baking tray.
  7. 7Bake at 165°C for 8 minutes.
  8. 8Remove the cake and let it cool slightly before filling.
  9. 9Fill the log with desired filling and roll it up.
  10. 10Place it in the freezer or fridge to set.
  11. 11Prepare the glaze and cover the log.
  12. 12Decorate with white chocolate ganache using a piping bag.
