Instructions

  1. 1Preheat the oven to 180°C (356°F).
  2. 2Grate the carrots and mix them with the egg, fresh chives, and grated mozzarella cheese.
  3. 3On a baking sheet, form small round shapes with the carrot mixture and flatten them slightly.
  4. 4Bake for 25 minutes until golden and set.
  5. 5Prepare the sauce by mixing Greek yogurt, mustard, garlic powder, smoked paprika, lime juice, fresh chives, chopped pickles, and pickle juice.
  6. 6Season the ground beef with garlic powder, smoked paprika, salt, and black pepper. Mix well and form two large meatballs.
  7. 7Heat a skillet over medium-high heat. Smash the meatballs into patties and cook for 1–2 minutes per side.
  8. 8After flipping, place a slice of cheddar cheese on each patty and cover to melt the cheese.
  9. 9Assemble the burgers: Place a carrot bun as the base, add arugula, sauce, the beef patty with melted cheddar, sliced red onion, and top with another carrot bun.
  10. 10Serve immediately.
