Addictive Simmered Mackerel with Aromatic Sauce
Ingredients
- 12 piece Boneless mackerel fillets (frozen, unsalted)(300g)
- 2600 ml Water(600g)
- 32 tablespoon Cooking sake(30g)
- 42 tablespoon Mirin(30g)
- 52 pinch Salt(2g)
- 62 tablespoon Green onion(10g)
- 72 leaf Shiso leaf(2g)
- 81 teaspoon Ginger (fresh, for garnish)(5g)
- 91 tablespoon Sugar(9g)
- 101 tablespoon Soy sauce(18g)
- 111 tablespoon Water (for sauce)(15g)
- 120.5 teaspoon Chicken bouillon powder(2g)
- 131 teaspoon White sesame seeds(3g)
- 141 teaspoon Vinegar(5g)
- 155 cm Garlic paste(5g)
- 165 cm Ginger paste(5g)
Instructions
- 1Add 600ml water, 2 tablespoons cooking sake, 2 tablespoons mirin, and 2 pinches of salt to a frying pan. Bring to a boil over high heat.
- 2Once boiling, add the frozen boneless mackerel fillets. Simmer over medium heat for 5 minutes.
- 3While the mackerel is cooking, mix together 1 tablespoon sugar, 1 tablespoon soy sauce, 1 tablespoon water, 0.5 teaspoon chicken bouillon powder, 1 teaspoon white sesame seeds, 1 teaspoon vinegar, 5cm garlic paste, and 5cm ginger paste to make the sauce.
- 4Remove the cooked mackerel and place on serving plates.
- 5Pour the sauce over the mackerel.
- 6Top generously with chopped green onion, shiso leaf, and fresh ginger.
- 7Optionally, drizzle with chili oil or sesame oil for extra flavor.
