Ingredients

  • 14 boneless, skinless chicken breasts(680g)
  • 21.5 pound baby Yukon Gold potatoes(680g)
  • 32 cup fresh green beans(240g)
  • 44 tablespoon unsalted butter, melted(56g)
  • 53 clove garlic(9g)
  • 61 teaspoon salt(6g)
  • 70.5 teaspoon black pepper(1g)
  • 82 tablespoon fresh parsley (optional, for garnish)(8g)

Instructions

  1. 1Preheat oven to 425°F (220°C).
  2. 2Toss the halved or quartered potatoes with 2 tablespoons of melted butter, half the minced garlic, salt, and pepper. Spread on a baking sheet.
  3. 3Roast potatoes for 15 minutes.
  4. 4Meanwhile, season chicken breasts with salt and pepper.
  5. 5After 15 minutes, push potatoes to one side of the baking sheet. Add chicken breasts and green beans to the sheet.
  6. 6Drizzle remaining melted butter and garlic over chicken and green beans.
  7. 7Return to oven and roast for another 20-25 minutes, until chicken is cooked through and potatoes are golden.
  8. 8Garnish with chopped fresh parsley before serving.
