Garlic Butter Chicken with Roasted Potatoes & Green Beans
Ingredients
- 14 boneless, skinless chicken breasts(680g)
- 21.5 pound baby Yukon Gold potatoes(680g)
- 32 cup fresh green beans(240g)
- 44 tablespoon unsalted butter, melted(56g)
- 53 clove garlic(9g)
- 61 teaspoon salt(6g)
- 70.5 teaspoon black pepper(1g)
- 82 tablespoon fresh parsley (optional, for garnish)(8g)
Instructions
- 1Preheat oven to 425°F (220°C).
- 2Toss the halved or quartered potatoes with 2 tablespoons of melted butter, half the minced garlic, salt, and pepper. Spread on a baking sheet.
- 3Roast potatoes for 15 minutes.
- 4Meanwhile, season chicken breasts with salt and pepper.
- 5After 15 minutes, push potatoes to one side of the baking sheet. Add chicken breasts and green beans to the sheet.
- 6Drizzle remaining melted butter and garlic over chicken and green beans.
- 7Return to oven and roast for another 20-25 minutes, until chicken is cooked through and potatoes are golden.
- 8Garnish with chopped fresh parsley before serving.
