1Form small balls of ground beef and smash them thin inside each mini taco shell.
2Season the beef with salt and black pepper.
3Heat avocado oil in a pan. Place the tacos upside down in the pan and add a slice of cheddar cheese on top of each.
4Prepare the sauce by mixing avocado mayo, ketchup, Dijon mustard, pickle juice or rice vinegar, caramelized onion, paprika, chili powder, black pepper, garlic powder, and salt.
5Add the sauce, chopped lettuce, and caramelized onion inside the tacos.
