Ingredients

  • 1750 g sweet potatoes(750g)
  • 22 eggs(100g)
  • 30.5 cup milk(120g)
  • 42.5 tablespoon all-purpose flour(20g)
  • 50.5 teaspoon salt(3g)
  • 63 tablespoon vegetable oil(36g)

Instructions

  1. 1Peel and slice the sweet potatoes.
  2. 2Wash the sweet potatoes thoroughly.
  3. 3Place the sweet potatoes in a pot, add salt, cover, and boil for 8-10 minutes until soft.
  4. 4Drain the water and transfer the sweet potatoes to a bowl.
  5. 5Mash the boiled sweet potatoes until smooth.
  6. 6Add eggs to the mashed sweet potatoes and mix well.
  7. 7Add milk and mix until combined.
  8. 8Add all-purpose flour and mix until a smooth batter forms.
  9. 9Heat vegetable oil in a pan over medium heat.
  10. 10Spoon portions of the mixture into the pan, shaping them like pancakes.
  11. 11Fry each side for about 4 minutes or until golden brown.
