- 1750 g sweet potatoes(750g)
- 22 eggs(100g)
- 30.5 cup milk(120g)
- 42.5 tablespoon all-purpose flour(20g)
- 50.5 teaspoon salt(3g)
- 63 tablespoon vegetable oil(36g)
Instructions
- 1Peel and slice the sweet potatoes.
- 2Wash the sweet potatoes thoroughly.
- 3Place the sweet potatoes in a pot, add salt, cover, and boil for 8-10 minutes until soft.
- 4Drain the water and transfer the sweet potatoes to a bowl.
- 5Mash the boiled sweet potatoes until smooth.
- 6Add eggs to the mashed sweet potatoes and mix well.
- 7Add milk and mix until combined.
- 8Add all-purpose flour and mix until a smooth batter forms.
- 9Heat vegetable oil in a pan over medium heat.
- 10Spoon portions of the mixture into the pan, shaping them like pancakes.
- 11Fry each side for about 4 minutes or until golden brown.
- 12Remove from the pan and serve hot.
