Soft and Fluffy Milk Bread
Ingredients
- 11 cup whole milk(240g)
- 20.25 cup sweetened condensed milk(80g)
- 30.33 cup granulated sugar(67g)
- 41 egg(50g)
- 52 teaspoon active dry yeast(6g)
- 63.25 cup all-purpose flour(406g)
- 74 tablespoon unsalted butter (for dough)(56g)
- 84 tablespoon unsalted butter (for glaze)(56g)
- 94 tablespoon sweetened condensed milk (for glaze)(80g)
- 100.5 egg (for brushing, optional)(25g)
- 111 teaspoon oil (for greasing bowl)(4g)
- 121 tablespoon butter or nonstick spray (for greasing pan)(14g)
Instructions
- 1Warm the milk until just lukewarm.
- 2In a large bowl, combine the warm milk, sweetened condensed milk, sugar, and egg. Mix well.
- 3Add the yeast and mix again.
- 4Add the flour and mix until a shaggy dough forms.
- 5Add the softened butter (for dough) and knead until fully incorporated. The dough will be sticky.
- 6Transfer the dough to a floured surface and knead by hand for about 10 minutes, until smooth and elastic.
- 7Grease a clean bowl with oil, place the dough inside, cover, and let rise in a warm place for 1 to 1.5 hours, or until doubled in size.
- 8Punch down the dough and transfer to a floured surface.
- 9Divide the dough into two equal parts. Roll each part out with a rolling pin or by hand, then roll up tightly and seal the edges.
- 10Place the shaped dough into a greased baking pan.
- 11Cover and let rise again until doubled in size, about 30-45 minutes.
- 12Preheat the oven to 350°F (175°C).
- 13Brush the top of the dough with beaten egg or milk (optional).
- 14Bake for 18 minutes or until golden brown.
- 15While the bread bakes, prepare the glaze by mixing the softened butter (for glaze) and sweetened condensed milk (for glaze) until smooth.
- 16As soon as the bread comes out of the oven, spread the glaze over the hot bread.
- 17Let cool slightly before slicing and serving.
