Chinese Takeout Sweet & Sour Chicken
Ingredients
- 12 medium Chicken breast(400g)
- 21 Egg white(33g)
- 31 teaspoon Oil(4g)
- 41 tablespoon Cornstarch(8g)
- 51 cup Self-rising flour(120g)
- 60.5 cup Cornstarch(64g)
- 71 teaspoon Garlic powder(3g)
- 80.5 teaspoon Salt(3g)
- 90.5 teaspoon White pepper(1g)
- 101 large Egg(50g)
- 111 cup Water(240g)
- 120.5 cup Sugar(100g)
- 134 teaspoon Cornstarch(10g)
- 140.75 cup Water(180g)
- 150.25 teaspoon Salt(1.5g)
- 161 teaspoon Soy sauce(5g)
- 176 teaspoon Vinegar(30g)
- 185 drop Red food coloring(0.1g)
Instructions
- 1Slice the chicken breasts in half and then into finger-sized pieces.
- 2Place chicken pieces in a bag or bowl.
- 3Add egg white, oil, and cornstarch to the chicken. Mix and massage well. Set aside.
- 4In a separate bowl, combine self-rising flour, cornstarch, garlic powder, salt, white pepper, egg, and water. Mix thoroughly to form a batter.
- 5Add the marinated chicken pieces to the batter and coat evenly.
- 6Heat oil in a deep fryer to 375°F (190°C). Fry battered chicken pieces until golden and crispy, about 3-5 minutes. Remove and drain.
- 7For the sauce, combine sugar, cornstarch, water, salt, soy sauce, and vinegar in a saucepan. Mix well to remove lumps.
- 8Add red food coloring if desired for color.
- 9Cook the sauce over medium heat, stirring, until the sugar dissolves and the sauce thickens and bubbles.
- 10Pour the sauce over the fried chicken and serve.
