Ingredients

  • 1185 g Dark chocolate(185g)
  • 2185 g Unsalted butter(185g)
  • 3275 g Golden caster sugar(275g)
  • 43 Eggs(150g)
  • 580 g Plain flour(80g)
  • 640 g Cocoa powder(40g)
  • 760 g White chocolate(60g)
  • 860 g Milk chocolate(60g)

Instructions

  1. 1Preheat the oven to 180°C (356°F).
  2. 2Melt the dark chocolate and unsalted butter together in a bowl over simmering water or in the microwave. Set aside to cool slightly.
  3. 3In a separate bowl, whisk together the golden caster sugar and eggs until pale and doubled in volume.
  4. 4Pour the cooled chocolate and butter mixture into the egg and sugar mixture. Gently fold together until combined.
  5. 5Sift in the plain flour and cocoa powder. Fold gently until almost fully combined.
  6. 6Add the white chocolate and milk chocolate chunks. Fold until just combined.
  7. 7Pour the batter into a lined or greased baking dish.
  8. 8Bake for 25-30 minutes, or until the edges are set and the center is still slightly fudgy.
  9. 9Allow the brownies to cool completely in the pan before cutting into squares.
