Fajita Chicken Mac n Cheese
Ingredients
- 1500 g chicken breast(500g)
- 21 tablespoon chicken seasoning(8g)
- 32 tablespoon fajita seasoning(16g)
- 41 onion(120g)
- 53 peppers(360g)
- 63 teaspoon garlic purée(15g)
- 7300 g pasta (uncooked)(300g)
- 8400 ml hot chicken stock(400g)
- 9600 ml milk(615g)
- 101 teaspoon mustard(5g)
- 11120 g cheese (cheddar and mozzarella mix)(120g)
- 121 salt and pepper(5g)
- 132 teaspoon parsley(2g)
- 141 teaspoon chilli flakes(2g)
Instructions
- 1Season the chicken breast with chicken seasoning and fajita seasoning.
- 2Fry the chicken in a large pan until cooked through and browned. Remove from the pan and set aside.
- 3Add the finely diced onion and peppers to the same pan. Cook until soft.
- 4Add the garlic purée and cook for about 1 minute.
- 5Add the uncooked pasta and mix well.
- 6Pour in the hot chicken stock and cook on high heat.
- 7Add the warmed milk and reduce the heat. Cook until the pasta is tender and the sauce is creamy.
- 8Stir in the mustard (if using) and cheese. Mix until the cheese has melted.
- 9Season to taste with salt and pepper.
- 10Return the cooked chicken to the pan and mix well.
- 11Garnish with parsley and chilli flakes if desired. Serve and enjoy.
