Vegetable Wrap with Smoked Salmon and Cottage Cheese
Ingredients
- 1250 g Carrots (grated)(250g)
- 2250 g Zucchini (grated)(250g)
- 3180 g Light cheese (Eat Lean)(180g)
- 43 Eggs(150g)
- 5220 g Potatoes (grated)(220g)
- 6200 g Smoked salmon(200g)
- 740 g Arugula(40g)
- 8200 g Cottage cheese(200g)
- 950 g Onion(50g)
- 1080 g Tomato(80g)
Instructions
- 1Preheat the oven to 200°C (392°F).
- 2In a bowl, combine grated carrots, grated zucchini, light cheese, eggs, and grated potatoes. Season as desired.
- 3Spread the mixture evenly on a baking tray lined with parchment paper.
- 4Bake for 30 minutes.
- 5Carefully remove the baked wrap base from the tray.
- 6Spread cottage cheese over the wrap base.
- 7Top with arugula, sliced onion, sliced tomato, and smoked salmon.
- 8Roll up the wrap, cut in half, and enjoy.
