Ingredients

  • 11 cup cottage cheese(240g)
  • 22 large eggs(100g)
  • 30.5 cup oat flour(60g)
  • 41 teaspoon vanilla extract(5g)
  • 50.5 teaspoon cinnamon(1g)
  • 61 teaspoon baking powder(4g)
  • 70.25 teaspoon salt(1g)
  • 80.5 cup finely chopped apple(75g)
  • 91.5 teaspoon honey or maple syrup(7.5g)

Instructions

  1. 1Preheat oven to 350°F (175°C) or air fryer to 350°F (175°C). Lightly grease a mini muffin pan or silicone mold.
  2. 2In a bowl, whisk together cottage cheese, eggs, vanilla extract, and honey or maple syrup until mostly smooth.
  3. 3Stir in oat flour, cinnamon, baking powder, and salt until a thick batter forms.
  4. 4Gently fold in the chopped apple.
  5. 5Spoon batter into prepared molds, filling each about three-quarters full.
  6. 6For oven: Bake for 15–18 minutes, until set and lightly golden.
  7. 7For air fryer: Cook for 10–12 minutes, until firm and cooked through.
  8. 8Let cool slightly before removing from molds. Serve warm or store in the fridge for up to 4 days.
