Apple Cinnamon Cottage Cheese Pancake Bites
Ingredients
- 11 cup cottage cheese(240g)
- 22 large eggs(100g)
- 30.5 cup oat flour(60g)
- 41 teaspoon vanilla extract(5g)
- 50.5 teaspoon cinnamon(1g)
- 61 teaspoon baking powder(4g)
- 70.25 teaspoon salt(1g)
- 80.5 cup finely chopped apple(75g)
- 91.5 teaspoon honey or maple syrup(7.5g)
Instructions
- 1Preheat oven to 350°F (175°C) or air fryer to 350°F (175°C). Lightly grease a mini muffin pan or silicone mold.
- 2In a bowl, whisk together cottage cheese, eggs, vanilla extract, and honey or maple syrup until mostly smooth.
- 3Stir in oat flour, cinnamon, baking powder, and salt until a thick batter forms.
- 4Gently fold in the chopped apple.
- 5Spoon batter into prepared molds, filling each about three-quarters full.
- 6For oven: Bake for 15–18 minutes, until set and lightly golden.
- 7For air fryer: Cook for 10–12 minutes, until firm and cooked through.
- 8Let cool slightly before removing from molds. Serve warm or store in the fridge for up to 4 days.
