Majarete (Creamy Corn Pudding)
Ingredients
- 1315 ml evaporated milk(325g)
- 2405 ml sweetened condensed milk(540g)
- 3950 g sweet corn(950g)
- 4228 ml coconut milk(220g)
- 580 g cornstarch(80g)
- 62 cinnamon stick(6g)
- 73 g salt(3g)
- 815 ml vanilla extract(15g)
- 940 g butter(40g)
- 101 lemon peel(6g)
Instructions
- 1Blend the sweet corn with the evaporated milk, condensed milk, and coconut milk until smooth. Strain the mixture to remove solids.
- 2Pour the strained mixture into a large pot. Add cornstarch, cinnamon sticks, salt, vanilla extract, butter, and lemon peel.
- 3Cook over medium-low heat, stirring constantly, until the mixture thickens and becomes creamy.
- 4Remove from heat and discard the cinnamon sticks and lemon peel.
- 5Serve hot in cups or bowls. Optionally, let cool for 30 minutes before serving.
- 6Decorate with ground cinnamon before serving.
