Instructions

  1. 1Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. 2In a medium bowl, whisk together flour, baking soda, and salt.
  3. 3In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
  4. 4Add the egg and vanilla extract to the butter mixture and mix until combined.
  5. 5Blend the cottage cheese until smooth, then add to the wet ingredients and mix well.
