Ingredients

  • 13 eggs(150g)
  • 2120 g erythritol (or sugar)(120g)
  • 350 ml oil(45g)
  • 450 g yogurt(50g)
  • 5100 ml milk(103g)
  • 6160 g flour(160g)
  • 740 g almond flour(40g)
  • 83 apples(450g)
  • 90.5 packet baking powder(8g)
  • 101 teaspoon cinnamon (optional)(2.6g)

Instructions

  1. 1Wash, peel, and dice the apples.
  2. 2In a large bowl, combine eggs, erythritol (or sugar), oil, yogurt, milk, flour, almond flour, baking powder, and cinnamon (if using). Mix until you get a smooth batter.
  3. 3Fold the diced apples into the batter.
  4. 4Pour the mixture into a lined cake pan.
  5. 5Bake in a static oven at 160°C (320°F) for 45 minutes or in an air fryer at 150°C (302°F) for about 35 minutes.
  6. 6Let the cake rest in the turned-off oven for 10 minutes.
  7. 7Remove from the oven, let cool, slice, and serve.
