Power & Glow Immunity Soup
Ingredients
- 12 lb carrots(900g)
- 21 white onion(150g)
- 312 garlic cloves(36g)
- 41 tablespoon olive oil(13g)
- 51 teaspoon curry powder(2g)
- 61 teaspoon smoked paprika(2g)
- 71 teaspoon salt(6g)
- 80.5 teaspoon black pepper(1g)
- 94 cup bone broth(960g)
- 101 block soft/silken tofu(300g)
- 111 tablespoon fresh grated ginger(6g)
- 120.5 lemon lemon juice(15g)
- 130.5 teaspoon chili flakes(1g)
- 144 tablespoon parmesan cheese(24g)
- 154 tablespoon fresh basil(8g)
- 164 tablespoon toasted seeds(32g)
Instructions
- 1Preheat oven to 400°F (200°C).
- 2Peel and chop carrots and roughly chop the onion. Add carrots, onion, and garlic cloves to a sheet pan.
- 3Drizzle vegetables with olive oil. Season with curry powder, smoked paprika, salt, and cracked black pepper.
- 4Roast in the oven for 45–50 minutes until vegetables are tender and golden.
- 5Transfer roasted vegetables to a blender or large pot.
- 6Add bone broth, soft/silken tofu (or cottage cheese), grated ginger, lemon juice, and chili flakes.
- 7Blend until creamy and smooth. Adjust seasoning with more salt, curry powder, or lemon juice as needed.
- 8Pour soup into bowls. Top each serving with grated parmesan, fresh basil, a squeeze of lemon, and toasted seeds.
- 9Serve hot and enjoy.
