Double Dough Coffee Bun (Roti O)
Ingredients
- 1350 g High-protein flour(350g)
- 25 g Instant yeast(5g)
- 365 g Granulated sugar(65g)
- 41 tablespoon Powdered milk(8g)
- 51 Egg(50g)
- 6170 ml Cold milk or cold water(170g)
- 74 g Salt(4g)
- 845 g Butter(45g)
- 96 g Instant coffee (Nescafe Classic)(6g)
- 101.5 tablespoon Hot water(22g)
- 112 pinch Salt(1g)
- 121 teaspoon Vanilla(4g)
- 1360 g Margarine(60g)
- 1450 g Powdered sugar(50g)
- 151 Egg(50g)
- 1670 g Medium-protein flour(70g)
Instructions
- 1In a large bowl, mix high-protein flour, instant yeast, granulated sugar, powdered milk, and salt.
- 2Add one egg and cold milk or water. Mix until a dough forms.
- 3Knead the dough until smooth, then add butter. Continue kneading until elastic.
- 4Cover and let the dough rise until doubled in size, about 1 hour.
- 5For the coffee topping, dissolve instant coffee in hot water. Let cool.
- 6In another bowl, cream margarine and powdered sugar until light.
- 7Add one egg, vanilla, and a pinch of salt. Mix well.
- 8Add medium-protein flour and the dissolved coffee. Mix until smooth.
- 9Transfer the coffee mixture to a piping bag.
- 10Divide the bread dough into small portions. Flatten each, fill with a bit of butter or margarine, and seal.
- 11Place the filled dough balls seam side down on a baking tray. Let rise until doubled.
- 12Pipe the coffee topping in a spiral over each bun.
- 13Bake in a preheated oven at 180°C (350°F) for 15-20 minutes or until golden brown.
