Jersey Mike's Sub Inspired Dense Bean Salad
Ingredients
- 11 can cannellini beans, rinsed and drained(425g)
- 21 can chickpeas (garbanzo beans), rinsed and drained(425g)
- 34 oz turkey pepperoni, chopped(113g)
- 47 oz deli ham, chopped(198g)
- 57 oz deli turkey, chopped(198g)
- 64 oz part-skim mozzarella, cubed or shredded(113g)
- 70.75 cup banana peppers, chopped(105g)
- 80.5 medium white sweet onion, finely diced(60g)
- 96 tablespoon light mayonnaise(90g)
- 100.5 cup Wickles sandwich spread (or any hoagie spread)(120g)
- 112 tablespoon red wine vinegar(30g)
- 121 teaspoon dried oregano(1g)
- 130.5 teaspoon salt(3g)
- 140.5 teaspoon black pepper(1g)
Instructions
- 1In a large bowl, combine the rinsed and drained cannellini beans and chickpeas.
- 2Add the chopped turkey pepperoni, deli ham, deli turkey, mozzarella, banana peppers, and diced onion.
- 3In a small bowl, mix together the light mayonnaise, hoagie spread, red wine vinegar, dried oregano, salt, and black pepper.
- 4Pour the dressing over the bean and meat mixture.
- 5Gently toss everything together until well combined.
- 6Cover and refrigerate for at least 1 hour to allow flavors to meld.
- 7Serve chilled. Stir before serving.
