Dominican Cassava Rolls (Chulitos Dominicanos, Alcapurrias)
Ingredients
- 12 whole cassava (yuca)(1200g)
- 21 tablespoon salt(18g)
- 31 tablespoon sugar(12g)
- 41 tablespoon butter(14g)
- 51 egg(50g)
- 63 tablespoon Dominican guasakaka(45g)
- 71 packet saffron powder(0.5g)
- 8100 g cheddar or mozzarella cheese(100g)
- 91 head garlic(50g)
- 101 red onion(100g)
- 112 tablespoon dried oregano(6g)
- 123 tablespoon oil(40g)
- 131 bitter orange(120g)
Instructions
- 1Peel and wash the cassava. Grate the cassava and squeeze out excess starch and liquid.
- 2In a large bowl, combine the grated cassava with salt, sugar, butter, egg, Dominican guasakaka, and saffron powder. Mix well until a dough forms.
- 3To make the guasakaka: blend together garlic, red onion, dried oregano, oil, and bitter orange until smooth.
- 4Take a handful of the cassava mixture, flatten it in your palm, and make a small indentation in the center.
- 5Fill the indentation with your choice of cheese.
- 6Seal the dough around the cheese to form a roll.
- 7Heat oil in a frying pan over medium heat.
- 8Fry the cassava rolls for 5 to 8 minutes, turning occasionally, until golden and crispy.
- 9Remove from oil and drain on paper towels. Serve hot.
