Ingredients

  • 11 cup dark chocolate(170g)
  • 21.5 cup heavy cream(360g)
  • 30.5 cup sugar(100g)
  • 43 eggs(150g)
  • 50.5 cup hazelnuts, chopped(65g)
  • 61 tablespoon gelatin(10g)
  • 71 layer cake base (chocolate sponge)(80g)

Instructions

  1. 1Melt the dark chocolate over a double boiler and let it cool slightly.
  2. 2Whip the heavy cream until soft peaks form.
  3. 3In a separate bowl, beat the eggs and sugar until pale and thick.
  4. 4Dissolve gelatin in a small amount of warm water.
  5. 5Fold the melted chocolate into the egg mixture.
  6. 6Add the dissolved gelatin and mix well.
  7. 7Gently fold in the whipped cream.
  8. 8Fold in the chopped hazelnuts.
  9. 9Place the chocolate sponge cake base in a cake ring or mold.
  10. 10Pour the mousse mixture over the cake base and smooth the top.
  11. 11Chill in the refrigerator for at least 4 hours or until set.
  12. 12Unmold and garnish with extra hazelnuts and chocolate glaze if desired.
