Hazelnut Chocolate Mousse Cake
Ingredients
- 11 cup dark chocolate(170g)
- 21.5 cup heavy cream(360g)
- 30.5 cup sugar(100g)
- 43 eggs(150g)
- 50.5 cup hazelnuts, chopped(65g)
- 61 tablespoon gelatin(10g)
- 71 layer cake base (chocolate sponge)(80g)
Instructions
- 1Melt the dark chocolate over a double boiler and let it cool slightly.
- 2Whip the heavy cream until soft peaks form.
- 3In a separate bowl, beat the eggs and sugar until pale and thick.
- 4Dissolve gelatin in a small amount of warm water.
- 5Fold the melted chocolate into the egg mixture.
- 6Add the dissolved gelatin and mix well.
- 7Gently fold in the whipped cream.
- 8Fold in the chopped hazelnuts.
- 9Place the chocolate sponge cake base in a cake ring or mold.
- 10Pour the mousse mixture over the cake base and smooth the top.
- 11Chill in the refrigerator for at least 4 hours or until set.
- 12Unmold and garnish with extra hazelnuts and chocolate glaze if desired.
